Experience the intricacies of Hokkaido fine dining in your very own Niseko chalet and be amazed by some of the finest talents, first hand. Offering exquisitely simple French and Japanese cuisine that will enthuse the senses with subtle flavors, creative flair and delicate finesse.

 

FRENCH CUISINE 
All of our French courses start with a tall glass of champagne matched with three intensely flavored bite-sized teasers created daily by the chef. Also included in the course is a basket of fresh baked breads. To finish, the chefs will offer a selection of cheeses and daily changing dessert served with freshly ground coffee.

Chef's Tasters Course
Hokkaido Taraba crab rillette topped with a charlotte frisee salad dressed in a white wine vinaigrette | Hokkaido root vegetable soup.

  1. Grilled Wagyu sirloin steak finished in a beef just essence side with pumpkin puree and seared vegetables.
  2. Sea bream, scallop and prawn sauteed in a lemon butter side with roasted local vegetables.

Scallop, surf clam and Tsubu lightly smoked topped upon truffle and crispy lettuce greens | chawan mushi layered consume topped with fois gras | Sauteed lobster and sea bream side with asparagus spears and drizzled in beure blanc | Rack of lamb with garlic mash, roasted vegetables and a port reduction.

Similar to the French course, we will start with a plum liquor matched with a Japanese Zensai of three small teasers.  To finish, a savory egg custard and a selection of seasonal fruits will be served

Steamed Hokkaido Taraba crab doused in lemon | tuna, salmon, scallop, shrimp, cuttlefish, whitefish, mackerel and salmon roe prepared to order from our in house sushi bar.

Fresh sashimi dish of tuna, salmon, scallop, shrimp and cuttlefish on a bed of shoe string white radish | wagyu beef, vegetables and tofu lightly passed through a beef broth matched with both ponzu and white sesame sauce.

Sashimi dish of fresh tuna, scallops, prawn, salmon, mackerel on a bed of shoe string white radish | steamed Hokkaido Taraba Crab doused in lemon | baked and torched cuttlefish side with spicy mayonnaise | chiken, pork, duck skewered with bamboo and seasoned with sea salts | tempura vegetables | Makkari tofu floured and pan fried until crispy then drizzled in bonito sauce | chilled ramen salad with a touch of white sesame sauce | green tea ice topped with Hokkaido adzuki beans and seasonal fruits.
