Experience the intricacies of Hokkaido fine dining in your very own Niseko chalet and be amazed by some of the finest talents, first hand. Offering exquisitely simple French and Japanese cuisine that will enthuse the senses with subtle flavors, creative flair and delicate finesse. 

FRENCH CUISINE
All of our French courses start with a tall glass of champagne matched with three intensely flavored bite-sized teasers created daily by the chef. Also included in the course is a basket of fresh baked breads. To finish, the chefs will offer a selection of cheeses and daily changing dessert served with freshly ground coffee.

Meat Course Wagyu ribulose shabu-shabu with vegetable puree.

JAPANESE CUISINE
Similar to the French course, we will start with a plum liquor matched with a Japanese Zensai of three small teasers.  To finish, a savory egg custard and a selection of seasonal fruits will be served

Fresh sashimi dish of tuna, salmon, scallop, shrimp and cuttlefish on a bed of shoe string white radish | wagyu beef, vegetables and tofu lightly passed through a beef broth matched with both ponzu and white sesame sauce.  
   
The Chef's Izakaya Party Course 9,000JPY p/p
Sashimi dish of fresh tuna, scallops, prawn, salmon, mackerel on a bed of shoe string white radish | steamed Hokkaido Taraba Crab doused in lemon | baked and torched cuttlefish side with spicy mayonnaise | chiken, pork, duck skewered with bamboo and seasoned with sea salts | tempura vegetables | Makkari tofu floured and pan fried until crispy then drizzled in bonito sauce | chilled ramen salad with a touch of white sesame sauce | green tea ice topped with Hokkaido adzuki beans and seasonal fruits.

Learn how to cook French cuisine at your home kitchen.
Cook three plates using locally fresh picked vegetables, Hokkaido fresh fish and meat for key ingredients and our chef will give you some secret tips for only our special guests!
Our chef will visit your accommodation and you can enjoy a personal cooking lesson in the comfort of your own kitchen.

Niseko Green Farm Tour
Niseko Green Farm is a local organic farm which is 15min away from Hirafu. Farm staff will show you around the farm and you can hand pick fresh vegetables. Later, back at your accommodation, our chef will prepare your special harvested vegetables in the comfort of your home.
You can experience a very local taste of Niseko which will be an unforgettable summer memory for you and your children.
* The vegetables that you can harvest from the farm change with the season.
